Pesto Sandwiches

Cooking the famous Italian sauce in a new way.

The earliest source mentioning this sauce is considered to be the culinary book Genoese Cooking, by Giovanni Batista Ratto (1863). However, there are many versions of this sauce origin.

Basil, which was imported to Italy from Asia, was often used for medicinal purposes. He was very much appreciated for the pronounced antiseptic, antipyretic, diaphoretic and antispasmodic properties. Later it was actively used in cooking as an ingredient which dives a zest to dishes.

Today, Pesto sauce is an indispensable element of a wedding table in Italy. It is considered as a symbol of the wealth and well-being of the bride and groom. However, Pesto decorates many dishes in everyday life too.

To prepare this sauce, we will need:

  • 70 g fresh basil
  • 30 g peeled pine nuts
  • 60 g Parmigiano Reggiano cheese
  • 40 g Pecorino or Fiore Sardo cheese
  • 2 cloves of garlic
  • 80 g Bioteca Hemp seed Oil

One of the main features in the preparation of Pesto sauce is the temperature of the products used, they must be of room temperature. That is why it is important to take all the ingredients out of the refrigerator at least half an hour before cooking.

Wash the basil leaves in cold water and then dry them with a kitchen towel.

Grind garlic and pre-soaked pine nuts to remove phytic acid from them.

The tradition says that all the ingredients of the sauce should be crushed in a marble mortar with a wooden pestle, but if you don’t have it you can use a blender.

Add basil to the mortar, a little bit of salt and start grinding everything in a circular motion. Gradually, the mixture will begin to resemble a green cream, after what a cheese must be added to the sauce.

In the end, when all the ingredients are ready, add some Bioteca hemp seed oil to the sauce.

After cooking, the sauce can be folded in a glass jar and stored in the refrigerator for 5-6 days.

It allows you to quickly and easily complement simple sandwiches from cherry tomatoes, Greek halloumi cheese or mozzarella, arugula and olives and will make your breakfast or snack more rich in taste and healthy nutrients.
